If you’ve been driving all day to get to your campsite and don’t feel like spending all evening cooking anything extravagant, these three simple and super-quick recipes are perfect. They take no time to prepare and are absolutely delicious. We guarantee you’ll come back to these time and time again.

Sausage and Pene Pasta

This simple recipe is our first go-to meal when we are on the road. It’s great as a quick dinner for an overnight stop or a hot lunch if the weather is a little on the cooler side.  We find that we can get 4 serves out of one batch. Keeps in the fridge for a few days easily. Simply reheat in the microwave.

Ingredients:

  • 1kg pack of sausages,
  • 1 x packet of penne noodles,
  • 1 x jar of your favourite Italian pasta sauce,
  • Tabasco sauce (optional),
  • Half a punnet of cherry tomatoes
  • olive oil,
  • a little salt

Preparation and Cooking:

Pan-fry or grill the sausages to the point where they are almost cooked through. Remove from the heat and cut up into small pieces about 2-3cm long. Return to the pan, add the cherry tomatoes (halved) and stir fry for 2 minutes. Pour in the sauce, stir and simmer for about 10-15 minutes. Add a couple of drops of Tabasco sauce to taste.

While simmering the sausages, bring a pot of water to the boil, add a couple of pinches of salt and a drop of olive oil and cook the pasta until al dente.

Serve on a plate or bowl with noodles on the bottom and sauce on top or stir through.

Sharron’s Smokey Chorizo Fettuccini

This one comes from our dear friend Sharron Mullins who is travelling around the country with her husband, Kevin.  She has become the master of inexpensive food on the road and this is her favourite fast meal. 

Ingredients:

  • 1 x Smokey chorizo  sausage 
  • 2 x Rashers of bacon
  • 3 x Large handfuls spinach 
  • Black olives
  • Small salad tomatoes 
  • Danish fetta
  • Grated Parmesan 
  • Fettucini pasta 

Preparation and Cooking:

Cut tomatoes in 1/2 and season and cook on high in oven till well cooked. 

Cut up bacon and chorizo and fry while the tomatoes are cooking. 

When cooked to your taste remove and start cooking pasta. 

When the pasta is cooked, drain and drizzle oil to separate the pasta. 

Put meat back on heat, add spinach and stir till wilted. 

Put pasta on plate add chorizo mix, olives, fetta and tomato and freshly grated Parmesan to taste. 

Serve with red wine and enjoy…!!

Roasted Beets, Potatoes with Chorizo

This tasty super-quick recipe can be cooked in the oven or Weber BBQ but is best done in the air fryer if you have one.

Ingredients:

  • 3-4 Small potatoes
  • I x Packet of peeled and cooked beets
  • 1 x Medium onion
  • 1 x Chorizo sausage
  • Olive oil
  • Mixed dried herbs
  • Sweet paprika
  • 1/4 Cup of pine nuts (optional)

Preparation and cooking:

Roughly chop unpeeled potatoes, beets, onion and chorizo sausage. (approx 1cm cubes)

Place mix in a tray, drizzle with a tablespoon of olive oil and stir to coat the mix. If cooling in an air fryer, take out the grate and cook in the bare drawer.

Cook at 200 deg for as long as it takes until the veggies are cooked to your liking. Estimate 30 minutes in an air fryer and 1 hour in a conventional oven or Weber.

Toss the mix occasionally to ensure even cooking.

With about 10 minutes left to cook, sprinkle the mix with dried mixed herbs, sweet paprika and a 1/4 cup of pine nuts.

Serve in a bowl. For a bit of extra zing, sprinkle with chilli flakes.
